THE FOOD SAFETY STARS AWARD CRITERIA

These are the requirements for premises to attain Food Safety Stars Awards

3 Star Food Safety Stars Premises
 

Must achieve all of these requirements at the time of inspection
  • Hand basin accessible and utilised (hand basin is clean, only used for hand washing, equipped with soap and paper towels)
  • No evidence of pests and premises clean - no build-up of food debris, dirt/grease etc
  • Sanitisers used and evident on premises
  • No evidence of possible cross contamination: Separation of raw and cooked food in storage areas (ie cool rooms, displays etc) and during food handling (ie separate colour-coded chopping boards, shelves)
  • Temperature of fridges and refrigerated displays below 5°C
  • Temperature of hot display units above 60°C
  • No food left out in ambient temperature unless used in food preparation and covered

4 Star Food Safety Stars Premises

Must achieve all of the 3 star requirements, as well as all of these requirements at the time of inspection
  • Rubbish storage area clean and tidy
  • Cleaning equipment clean and stored appropriately
  • Clean/tidy personal protective clothing worn by appropriate personal.
  • Hair covering worn by all food handlers in the food preparation area.
  • Working accurate probe thermometer utilised on premises

 

5 Star Food Safety Stars Premises

Must achieve all of the 3 and 4 star requirements, as well as all of these requirements at the time of inspection
  • Premises is FoodSafe Accredited or
     
  • Premises have implemented food safety plans to the satisfaction of the Environmental Health Officer)
